Breakfast Potatoes with Color & Style!
I love making potato dishes! Here in this recipe I show techniques to get the perfect breakfast potatoes every time.

Perfect Breakfast Potatoes Recipe
Ingredients:
2.5 pounds of tricolor potatoes (Red Bliss, Purple Peruvian, Yukon Gold), or any single variety
1 red onion, diced
Clarified butter (or your favorite cooking oil)
Salt
Pepper
Asiago cheese, shaved
Scallions, sliced
Equipment:
Large pot
Colander
Induction pan or large cast iron pan
Paper towels
Knife and cutting board
Method of Preparation:
1. Prepare the Potatoes:
Fill a large pot with water. The potatoes should occupy no more than 50% of the potβs area.
Bring the water to a boil and add enough salt so that the water tastes slightly salty. If in doubt, add a bit more salt.
Cut the potatoes into roughly quarter-inch rounds. Aim for uniform size to ensure even cooking.
2. Boil the Potatoes:
Place the potato slices into the boiling water. The water will stop boiling temporarily due to the cooler potatoes.
Wait for the water to return to a boil and let the potatoes cook for about one minute. Avoid overcooking to maintain their shape and ensure crispiness.
3. Cool and Dry the Potatoes:
Pour the potatoes into a colander and rinse with cold water to wash off the starch.
Pat the potato slices dry with paper towels. This step is crucial for achieving crispiness when frying.
4. Prepare the Onions:
Dice the red onion by cutting it lengthwise, then horizontally, and finally dicing it.
5. Fry the Potatoes:
Heat clarified butter in an induction pan or a large cast iron pan over medium-high heat.
Add the potatoes to the pan, ensuring they are not overcrowded. Each potato slice should touch the pan to avoid steaming and promote caramelization.
Move the potatoes around every minute or two to cook them evenly. Sprinkle a little salt at the beginning.
6. Add Onions and Final Seasoning:
Once the potatoes are halfway to a golden brown, add the diced onions and stir to incorporate evenly.
Continue cooking until the potatoes are a nice golden brown and crispy.
Add final seasoning to taste. Salt and pepper are suggested, but feel free to use your favorite seasonings.
7. Plate and Garnish:
Transfer the potatoes to a serving dish.
Shave some Asiago cheese on top. Finish with sliced scallions for a fresh touch.
Tips:
Use a large enough pan to ensure the potatoes have ample space for even cooking.
Cook the potatoes slowly and evenly for the best texture and flavor.
Clarified butter helps achieve a higher cooking temperature without burning, resulting in crispier potatoes.
